Young chef risen through the ranks returns to Thornbury Castle
Award-winning hotel Thornbury Castle is delighted to announce the return of Andrew Chan and his appointment as Head Chef.
Andrew, 32, worked at Thornbury Castle from April 2012 to June 2014 before taking up his first Head Chef role at The Polurrian Bay Hotel in Cornwall – another property in the Luxury Family Hotels group. While working at Thornbury Castle, Andrew was recognised as South West Chef of the Year in 2013.
During his two years at the Polurrian Bay, the hotel was awarded two AA Rosettes (in August 2016).
Andrew says: “I love cooking and believe if you put your heart into it, you can achieve anything. It is fantastic to be able to have worked my way up from when I first started at the castle as a Sous Chef to where I am today. It’s a real honour to be Head Chef at the Castle, which is renowned for its fine dining.”
“I’m looking forward to seeing old and new customers from the local area and also from around the world, who will be staying at the castle and can’t wait to coming up with a range of new signature dishes made from the best ingredients that are sourced locally.”
At present, Andrew is concentrating on the Christmas offerings and he plans to produce new Dungeon Dining and Afternoon Tea menus in the New Year. He also hopes to introduce a vegetable garden next year alongside the existing herb garden. In addition he will continue to use locally sourced produce where possible, meaning that the finest and freshest ingredients are used in the restaurant.
